They are abound in our waterways - easy to catch, or buy in the supermarket, they are are perfect match for lemon mayonnaise finished with your favourite chopped herbs.
Separate an egg and put the yolk only into a suitable bowl; add a teaspoon of French mustard, a good pinch of salt, ground black pepper, and (make sure noone is watching) a teaspoon of shop bought mayonnaise.
Beat well, then add your best olive oil in a thin stream, beating all the while, with a light heart, knowing you have just enough emulsifier present to prevent the sauce from splitting. Taste for seasoning, add a squeeze of lemon, and perhaps chopped green herbs.
